Tommy Truffle

A smoky, earthy twist on the classic Tommy’s Margarita. Made with truffle oil–washed mezcal, fresh lime, and agave, this cocktail delivers a luxurious depth of flavour. Finished with a rim of truffle salt for that extra savoury hit.

Serves

1 (Easily scalable for additional servings)

Ingredients

  • 60ml truffle oil–washed mezcal (directions to make below)
  • 30ml fresh lime juice
  • 15ml agave syrup
  • Truffle sea salt flakes (for rimming)

Method

  1. Rim your glass with truffle salt and set aside.
  2. Add truffle-washed mezcal, lime juice, and agave syrup into a cocktail shaker.
  3. Fill the shaker with ice and shake vigorously until the outside of the shaker is frosty.
  4. Strain into your prepared glass and serve immediately.

To make truffle oil–washed mezcal:

  1. Mix 1 part truffle oil with 10 parts mezcal in a sealed jar.
  2. Sit the jar in a warm water bath for 2 hours, then freeze overnight.
  3. Once the oil solidifies, strain the mezcal through a coffee filter.
  4. Store chilled.
