Cooking Demonstration with Alain Fabrègues (MOF)

Enjoy an intimate and exclusive 2 hours of culinary inspiration from our very own Master Chef

  • Learn from a Meilleur Ouvrier de France. Watch Chef Alain Fabrègues, holder of one of France’s most prestigious culinary honours, as he cooks and presents each dish, sharing decades of classical French technique along the way.
  • Just six guests per session. With so few places, everyone gets a front-row view of the stove and real time with the chef.
  • Pick Chef Alain’s brains. Ask him about technique, how to choose and store truffles, or the dish you’ve never quite nailed at home. This is a conversation, not a lecture.
  • Taste every dish, with a paired wine tasting. Enjoy each creation as it comes off the pan, paired with wines chosen to bring out the best in the truffle. (Not a full meal)
  • A beautiful setting in Claremont. For two hours our Truffle Hill Boutique becomes a private kitchen, surrounded by the finest truffle produce Western Australia has to offer.
  • Take a little truffle home. Every guest leaves with a gift pack to create magic in their own kitchen.

COOKING DEMONSTRATION FAQ's

What’s included?

Your ticket includes a demonstration of approximately two hours with Chef Alain Fabrègues, where you’ll watch him prepare a selection of truffle dishes while explaining his techniques and inviting your questions. You’ll taste each dish as it’s prepared, paired with wines chosen to complement the truffle, and leave with a gift pack to help you recreate the experience at home.

Will you use real truffles?

Absolutely. During the Western Australian truffle season, Chef Alain works with fresh black Périgord truffles grown on our own farm in Manjimup. Outside the season, he uses our preserved truffle and a selection of truffle products, which is a great opportunity to learn how to enjoy truffle all year round. Either way, you’ll see firsthand how to get the most flavour from this remarkable ingredient.

Truffle Cooking Demonstration Terms & Conditions

1. About these terms

1.1 These terms apply to bookings for Truffle Cooking Demonstrations ("Demonstrations") at the Truffle Hill Boutique, 38 Graylands Road, Claremont WA 6010. Demonstrations are run by Manjimup Artisan Truffles Pty Ltd trading as Truffle Hill ("Truffle Hill", "we", "us").

1.2 By making a booking you confirm you have read and accept these terms, both for yourself and for every guest included in your booking. Please share them with your guests.

1.3 The terms in place at the time you book are the terms that apply to your booking. If we update these terms, the changes apply only to bookings made after the update.

1.4 Nothing in these terms limits your rights under the Australian Consumer Law (see section 10).

2. Bookings and payment

2.1 Advance bookings are essential. Each Demonstration is limited to 6 guests and places are confirmed in the order payment is received.

2.2 Full payment is required at the time of booking. Prices are per person, in Australian dollars and include GST.

2.3 Your booking is confirmed once you receive a confirmation email from us. Please check the date, time and number of guests and contact us straight away if anything is wrong.

2.4 Please arrive 10 to 15 minutes before the start time and meet our team in the boutique.

2.5 Private bookings of all 6 places, or Demonstrations on a date of your choosing, may be available on request. These may be quoted with separate terms, which we will give you in writing before you pay.

3. If we reschedule or cancel

3.1 Minimum numbers. Each Demonstration needs a minimum of 4 guests to go ahead. If this minimum is not reached, we may reschedule or cancel the Demonstration. We will tell you at least 72 hours before the start time.

3.2 Unforeseen circumstances. We may also need to reschedule or cancel a Demonstration because of events outside our reasonable control. Examples include illness or unavailability of Chef Alain Fabrègues, a power, gas or equipment failure, damage to or closure of the boutique, severe weather, a public health direction or another emergency. In these cases we will tell you as soon as we reasonably can, which may be at short notice.

3.3 Your choice. Whenever we reschedule or cancel a Demonstration, you can choose:

  • a place at another Demonstration of your choice, subject to availability;
  • a Truffle Hill gift card for the full amount paid; or
  • a full refund of the amount paid, to the original payment method.

If you booked with a gift card or voucher, a refund will be made back to that gift card or voucher.

3.4 Changes to timing. If we need to change the start time by more than 30 minutes, we will contact you. If the new time doesn't suit, you can choose any of the options in 3.3.

3.5 Chef Alain. Demonstrations are presented by Chef Alain Fabrègues. If he cannot present and we propose another presenter, we will tell you before the Demonstration and you can still choose any of the options in 3.3.

3.6 We will contact you using the phone number and email address in your booking, so please keep them up to date. To the extent permitted by law, we are not responsible for travel, parking, accommodation or other costs you incur because a Demonstration is rescheduled or cancelled.

4. If you need to cancel or change your booking

4.1 We buy fresh produce and prepare for each Demonstration in advance, and with only 6 places a late cancellation is hard to fill. Please give us as much notice as you can, by phone or email.

4.2 Notice is counted from when we receive your email or phone call. A booking can be rescheduled once. A rescheduled booking is then treated as a booking for the new date under this table.

4.3 Sending someone in your place. You can transfer your place to another person at no cost at any time up to the start of the Demonstration. Please give us their name and any dietary requirements. They must be 18 or older and these terms apply to them.

4.4 Late arrival. Demonstrations start on time and dishes cannot be repeated. If you are running late, please call us on [phone]. We will do our best to fit you in, but no refund applies for any part of the Demonstration you miss.

4.5 Leaving early. No refund applies if you choose to leave before the Demonstration ends.

4.6 Refunds are made to the original payment method, usually within 10 business days.

5. Gift cards and vouchers

5.1 Truffle Hill gift cards can be used to book a Demonstration, subject to availability. A gift card does not reserve a place until a booking is made.

5.2 Bookings made with a gift card follow the same cancellation and rescheduling terms in section 4. Any refund is returned to the gift card rather than paid in cash.

5.3 Gift cards are valid for at least 3 years from the date of purchase, and the expiry date is shown on the card. If the price of a Demonstration rises before you book, you may need to pay the difference.

5.4 Gift cards cannot be exchanged for cash, except where the law requires it. Please keep your gift card code safe, as we cannot replace a code that has been used by someone else.

6. Age and alcohol

6.1 Demonstrations are for guests aged 18 and over. Wine is served as part of the experience, and staff may ask for photo ID. A guest under 18 will not be admitted and no refund applies, so please check ages before booking.

6.2 Wine is served in tasting portions and in line with responsible service of alcohol. Our staff may refuse to serve any guest who appears intoxicated, and guests must not bring their own alcohol.

6.3 If you prefer not to drink, please let us know and we will offer a non-alcoholic alternative where available. The ticket price is the same whether or not you drink.

6.4 Please plan safe transport home if you are drinking.

7. Dietary requirements and allergies

7.1 Please tell us about any dietary requirements or allergies when you book, and no later than 48 hours before the Demonstration. We will do our best to offer a suitable alternative for tasting.

7.2 Because the menu is set and the dishes are cooked in front of the group, some requirements may not be possible to accommodate. If so, we will contact you before the Demonstration so you can choose to reschedule, transfer your place or cancel for a full refund.

7.3 If a requirement is first raised on the day, we may not be able to offer an alternative, and this does not entitle you to a refund.

7.4 Dishes are prepared in a kitchen that also handles common allergens, including gluten, dairy, eggs, nuts, fish, shellfish and sulphites (in wine). We cannot guarantee any dish is free from traces of allergens.

7.5 Truffles are a fungus. Guests with a mushroom allergy may react to truffles and should speak with us before booking.

7.6 If you have a severe allergy, please bring any medication you may need, such as an adrenaline autoinjector, and let our staff know where it is.

8. The Demonstration

8.1 Demonstrations run for approximately 2 hours. They are watch-and-learn: Chef Alain cooks and presents each dish, and guests watch, ask questions and taste. Guests do not cook.

8.2 You will taste each dish with a paired wine tasting. Tastings are not a full meal.

8.3 Menus shown on our website are examples only. Dishes depend on the season and the availability of produce, including fresh truffle, which is harvested in winter. Outside the fresh season we may use preserved truffle products. We may change dishes without notice, and a change of menu does not entitle you to a refund.

8.4 Each guest receives a gift pack. Its contents may vary and cannot be exchanged for cash. Gift packs not collected on the day are forfeited unless we agree otherwise.

8.5 Products in the boutique are available to buy after the Demonstration. Purchases are separate from your booking and follow our standard refund policy.

9. Conduct, safety and liability

9.1 For everyone's safety, please follow the directions of Chef Alain and our staff, and stay out of the cooking area unless invited. Cooking surfaces, pans and knives are hot or sharp.

9.2 We may refuse entry to, or ask to leave, any guest who is intoxicated, behaves in a way that is unsafe or disruptive to others, or does not follow staff directions. In that case no refund applies.

9.3 Please wear enclosed shoes and let us know before the Demonstration if you have any mobility or access needs, so we can help.

9.4 Please look after your personal belongings. To the extent permitted by law, we are not responsible for loss of or damage to belongings you bring to the boutique.

9.5 To the extent permitted by law, we are not liable for any injury, loss or damage that results from a guest not following staff directions, or for any indirect or consequential loss. Nothing in this section excludes any liability that cannot be excluded by law, including for our own negligence.

10. Photos, privacy, your rights and contact

10.1 Your photos. You are welcome to take photos and short videos for personal use. Please keep phones on silent and tag #TruffleHill. Recording or sharing the Demonstration for commercial purposes is not permitted without our written consent.

10.2 Our photos. We may photograph or film Demonstrations and use the images in our marketing, website and social media without payment. If you would prefer not to appear, please tell our staff before the Demonstration starts and we will respect that.

10.3 Privacy. We use your booking details, including any dietary or allergy information, to run your booking and keep you safe. We handle personal information in line with our Privacy Policy.

10.4 Australian Consumer Law. Our services come with guarantees that cannot be excluded under the Australian Consumer Law. Nothing in these terms excludes, restricts or modifies those rights.
