Truffle Hill has partnered with Republic of Fremantle to create a distinctive new expression of a cocktail classic — the 2026 Barrel Aged Negroni, bringing together premium Western Australian distilling, Truffle Hill Estate wine and fresh Manjimup black Périgord truffle.

Republic of Fremantle’s full bodied gin, Campari and Antica Formula Vermouth are rested in oak for three months, softening the Negroni’s characteristic bitterness while developing layers of vanilla, spice and toasted oak.

A portion of Truffle Hill Estate 2022 Merlot was then returned to the blend, adding subtle fruit, structure and richness, before the final and most distinctive element is introduced — an infusion of fresh black Périgord truffle, harvested from our Manjimup estate.

The result remains unmistakably Negroni, opening with bittersweet orange, spice and botanicals before the truffle gradually reveals itself through the finish. Earthy, aromatic and beautifully restrained, it intertwines with the oak, vanilla and rich fruit characters to create a savoury, layered and deeply complex drinking experience.

A unique collaboration between two Western Australian producers, the Truffle Hill x Republic of Fremantle Barrel Aged Negroni celebrates provenance, craftsmanship and the remarkable character of Manjimup black Périgord truffle.

Serve over ice with a generous orange peel, a sprig of rosemary, or both.

    Global recognition and acclaim

    Truffle production continued to increase and over 5,000kg was produced in 2014. The Truffle Hill was recognised as the largest producing truffère in the world, exporting over 80% of its crop to supply the world's best restaurants.

    Where did our journey begin?

    Since the very first Oak Tree was planted in 1997, the passion and dedication, coupled with an extraordinary microclimate, has seen what was until recently Truffle Hill become a premier truffière and the dream of producing French black truffles (Tuber Melanosporum), one of the most highly prized food products in the world, had begun.

    Why is the Southern region the best to grow truffles?

    The first distinctly aromatic truffle was unearthed on the 28th of July 2003, a perfect black winter truffle weighing 168 grams. At this time, the estate was covered by 40 kilometres of truffle tree rows and 12 hectares of grapevines.
