Truffle of the Week

The largest truffles to leave our estate this week. Gone the moment they sell.

Each week of the harvest, our team set aside truffles that stop us in our tracks. Large size, dense marbling, an aroma that fills the packing room before the box is even sealed. We grade them Icon Class as they are icons of our estate. Most weeks there's only one. Some weeks, two.

Each Icon truffle is around 150 grams plus of Tuber melanosporum, roughly three to five times the size of a typical retail truffle. The kind of truffle that becomes the centrepiece of a dinner people talk about for years.

It's offered on a simple rule: first to buy, takes it home. When it's claimed, it's gone until next week.

How to do it justice

A truffle this size deserves a table to match. Shave it raw and generously over fresh pasta, scrambled eggs, or a simple risotto, and let the aroma carry the room. Warm it gently, never cook it. Pour the wine. Invite the people who'll appreciate it.

Refrigerate on arrival, wrap in paper towel inside a sealed container, and use within 10 to 14 days for peak aroma.

Only available while this week's Icon lasts. When the cart says sold, it's already on its way to someone else.

How to enjoy Truffles?

How to enjoy your truffle

Black Périgord truffle isn't a flavour to fight against — it's one to set free.

  • Shave it raw over scrambled eggs, fresh pasta, risotto, or warm brie
  • Infuse it overnight in a sealed jar with eggs or butter for an effortless luxury
  • Warm, never cook — gentle heat releases the aroma; high heat destroys it
  • Pair it with simple, fatty foods: cream, butter, eggs, pork, soft cheeses

Truffle FAQs

FAQ updates

When will my order ship?
Orders are harvested and dispatched Monday to Wednesday to avoid weekend depot delays. Place your order any day — we'll ship it on the next available dispatch day.

How fresh will it be when it arrives?
Your truffle is lifted from the soil and graded the day before it leaves us. Most customers receive it within 2–3 days of harvest — fresher than most restaurant deliveries.

What if my truffle arrives damaged?
Contact us within 24 hours of delivery with a photo and we'll replace or refund it. No questions, no fuss.

Can I order outside the June–August season?
Fresh truffle is only available during the Australian winter harvest. Outside that window, explore our preserved truffle range — same Manjimup truffle, year-round.

Do you ship internationally?
Currently, fresh truffles are shipped within Australia only.

FAQs

Why Truffle Hill?

Not all truffles are created equal. At Truffle Hill, every black Périgord truffle is grown naturally on untouched soils in Manjimup's Southern Forests. We harvest with care, grade with precision, and deliver only the finest quality to chefs and food lovers worldwide. Our obsession with detail means you can expect consistency, authenticity,
and the unmistakable aroma that elevates every dish from ordinary to extraordinary.

Global recognition and acclaim

Truffle production continued to increase and over 5,000kg was produced in 2014. The Truffle and WineCo. was recognised as the largest producing truffère in the world, exporting over 80% of its crop to supply the world's best restaurants.

Where did our journey begin?

Since the very first Oak Tree was planted in 1997, the passion and dedication, coupled with an extraordinary microclimate, has seen what was until recently The Truffle & Wine Co. become a premier truffière and the dream of producing French black truffles (Tuber Melanosporum), one of the most highly prized food products in the world, had begun.

Why is the Southern region the best to grow truffles?

The first distinctly aromatic truffle was unearthed on the 28th of July 2003, a perfect black winter truffle weighing 168 grams. At this time, the estate was covered by 40 kilometres of truffle tree rows and 12 hectares of grapevines.
